Coming from a renowned Chablis lineage, Samuel Billaud embarked on an independent journey in 2009, establishing his eponymous Domaine. Previously the winemaker at Domaine Billaud-Simon, a respected producer synonymous with classic Chablis excellence, Samuel has achieved remarkable acclaim since launching his own label. The Séchet Vieilles Vignes Premier Cru comes from a 0.6-hectare plot of 80-year-old vines and spends 18 months on the fine lees. The 2021 vintage is widely regarded as favourable for Chablis, producing wines that are not only delectable but also display excellent ageing potential.

The 2021 Chablis Séchet Vieilles Vignes 1er Cru has quite a strict bouquet that lacks a little flair, especially considering the vineyard in question. The palate is taut and fresh though overall this is missing some complexity and feels rather bitter and shallow on the finish. A bit…mean. It was given a more laudatory score out of barrel and I wonder if this has gone into its shell? Tasted blind at the Burgfest tasting. Neal Martin8th October 2025

Cask sample. Slightly sweaty/spicy at the moment. But also a definite and attractive mineral stoniness. The palate shows that the sweatiness is temporary, as the citrus flavours are pure, deep and vibrant. Firmly textured, deep and long. A little spicy on the finish. (JH)
