Raveneau is arguably the finest wine producer in Chablis with a solid reputation across the globe. The Domaine was established by François Raveneau in 1948 and is currently run by cousins Isabelle and Maxime. Raveneau pioneered the use of Côte d`Or winemaking in Chablis, including barrel fermentation and extended lees contact. This release comes from Montmains, a Premier Cru where Raveneau owns a 0.36-hectare parcel. Chablis enjoyed a successful vintage in 2015, with a higher ripeness and slightly lower acidity.
Vinous
(these grapes were picked at the same time as the Forêt): Bright lemon-yellow. Cool and minty on the reticent nose. Then juicy on the palate and a bit more open-knit than the Forêt, but with an uncompromising dryness to the grapefruit and menthol flavors. This is more concentrated and enveloping if still a bit youthfully warm. These vines are about 30 years old, compared to 20 to 25 for the Forêt.
