Billaud Simon Chablis Mont de Milieu 2018 is a medium-bodied Chardonnay white wine produced from the Premier Cru, Mont der Milieu in the Chablis appellation of Burgundy. Founded in 1815, Domaine Billaud-Simon is renowned for producing some of the finest wines in Chablis, which have a particularly steely and mineral style. As of 2014) the estate is owned by the Faiveley family but is managed independently. This wine exhibits a clear expression of the Chablis terroir, offering minerality and precision on the palate.

(40% of this wine was aged in new oak, of which about one-fifth was new; bottled in May of 2012, just a couple weeks prior to my visit, along with the estate's grand crus): Tangy ripe peach and nectarine aromas are complicated but not overwhelmed by spicy oak. Supple and broad if not particularly sweet or expressive today. Much more thickness and structure here than the basic Mont de Milieu bottling.
