Montreal-born Patrick Piuze established his own négociant label in Chablis in 2008 having worked for the likes of Leflaive, Jean-Marc Brocard and Jean-Marie Guffens. He is a terroir obsessive, making no fewer than eight different villages-level wines and tries to express their individual character with vinification entirely in stainless steel. His Premier and Grand Cru wines are fermented and aged in used barrels for 10 months.
This is a wonderfully expressive and layered release of Grand Cru Les Preuses from the low-yielding but sensational quality 2019 vintage. It is undoubtedly great to drink already, though the best will come after several years careful cellaring.

Vinous
The 2019 Chablis Les Preuses Grand Cru has an exquisite bouquet of honeycomb, orange blossom, quince and yellow flowers, all beautifully defined. The harmonious palate is taut and linear, with impressive depth and lip-smacking salinity on the finish. Maybe this will ultimately surpass the Les Clos. Neal Martin1st September 2020
