Chablis Les Preuses 2002 from Domaine Billaud-Simon is a crystalline Grand Cru white from a vineyard renowned for its marine fossils and compact limestone. This vintage is celebrated for its near-perfect balance of ripeness and electric acidity, which has allowed the wine to age with magnificent grace. Maturation took place in stainless steel to preserve the site’s intense mineral focus, yielding a profile of crushed shells, lemon confit and white peach. After two decades, it has developed complex tertiary nuances of beeswax and flint while maintaining a piercingly fresh core. It offers a broader, more voluminous texture than the Blanchots, reflecting the power and sun-drenched exposure of the Preuses slope.

A wine of pure breadth and texture, the 2002 Chablis Grand Cru Les Preuses has probably not peaked yet. Lime, smoke, crushed rocks and white pepper flesh out with time. This racy, totally spherical Chablis has it all going on. The ripeness of the vintage is only apparent on the close.
