Domaine William Fevre Chablis Les Clos 2005 is a full-bodied white wine from the Grand Cru climat of Les Clos in the Chablis region of Burgundy. Established in 1959, William Fèvre has emerged as a significant landowner in Chablis, boasting holdings in six out of the seven Grand Cru appellations. Committed to limiting yields, the estate has embraced organic cultivation methods since 2000. This release hails from the Grand Cru Les Clos where William Fèvre owns a 4.1-hectare plot. "In contrast to the relative expressiveness of most of this group, the Les Clos is backward, reserved and very tight, revealing only glimpses of white flower, oyster shell and an airy marine influence that can also be found on the intense, pure and astonishingly precise flavours that possess another dimension relative to all of the other `05s with the exception of the Preuses. Class in a glass as they say and while presently tighter than a drum with an exceptionally dry finish, this has the material and balance to age for years." Burghound, 2007

Pale green color. Pure but subdued aromas of lemon-lime and crushed stone. Intensely flavored and youthfully tight, offering sharply delineated citrus fruit, white peach and crushed stone elements. In a cooler style for the vintage, with just the slightest exotic hint to show that it's from a very warm year. The very long, rising finish displays uncommon precision for the vintage. But the young 2006 appears to be even longer and more minerally.Stephen Tanzer1st July 2007

Chablis with exceptional terroir focus

Domaine William Fèvre, located in the prestigious Chablis region of Burgundy, has a legacy spanning over 250 years. Established in 1959, William Fèvre is one of the biggest landowners in Chablis, with just under 80 hectares of vineyards. Of these, 15.9 hectares are classified as Premier Cru, and 15.2 hectares as Grand Cru. The domaine boasts holdings in six out of the seven Grand Crus, with Les Clos as the flagship, producing profound white wine Chardonnay with great structure, mineral depth, and ageability.

The Fèvre family, led by the eponymous William Fèvre, established a reputation for fine wine production. The estate was sold to the Champagne house Joseph Henriot in 1998, but the legacy of the Fèvre family continues under the guidance of former Bouchard cellar master Didier Séguier. Under his management, William Fèvre has become a benchmark for terroir-focused Chablis, continuing the tradition started by William Fèvre's father.

Since 2000, the domaine has expanded its vineyard holdings while intensifying its commitment to sustainable farming practices. The estate has also embraced organic cultivation methods, with the entire 78 hectares estate becoming organic-certified in 2023. Careful oak management is central to William Fèvre’s terroir-driven style: Premier Cru wines are vinified in 40-50% French oak barrels; Grand Crus in 70-80%, without new wood.
