From a single-vineyard site in Chablis, the 2012 Les Clos exemplifies the distinct characteristics of this grand cru terroir. The wine, crafted by Vincent Dauvissat, a respected name in Burgundy, is derived from biodynamically farmed vines situated on one of Chablis’s highest slopes. Dauvissat employs a fermentation process using old oak barrels, allowing the wine to develop without imposing wood tannins. The 2012 vintage, marked by a cool growing season, yields concentrated flavours of green apple and oyster shells, alongside a pronounced flintiness. The influence of Kimmeridgian limestone contributes to the saline finish, showcasing the producer’s adherence to traditional winemaking methods and the vineyard`s unique terroir.

Bright medium yellow color; deeper than the '14. Pure and mineral-driven on the nose but much less expressive today than the 2014, hinting at lemon, grapefruit and various shades of stone. Offers more weight on entry than the 2014, then quite penetrating and very dry in the middle palate, dominated by lemony citricity and powdered stone. This brilliant calcaire wine finishes dusty, tactile and firm, with a hint of youthful bitterness. Showing little easy sweetness or early appeal, this very dry, salty wine can't match the '14 for its impeccable early balance but it should age for a long time despite its average acidity.
