Chablis Les Clos 1999 from Dauvissat-Camus is a fully mature Grand Cru from the most prestigious sites in the Chablis appellation. This label is used for a portion of the Vincent Dauvissat estate’s production, following the exact same winemaking processes as the main label, including fermentation and ageing in six-to-eight-year-old oak barrels. The 1999 vintage was generous and ripe, providing a wine with significant weight and a powerful structural core. At this stage of its evolution, it displays a profound mineral complexity, featuring notes of oyster shells, dried honey and roasted hazelnuts.

Vinous
Palish yellow. Alluring scents of orange peel, floral honey, vanilla, marzipan and flinty minerality suggest a wine that's pretty close to fully mature. Dense, very rich and ripe and supple, with flavors of orange blossom, sea salt and crushed shells lifted by a lavender topnote. But this fine-grained, very dry wine, in spite of its very healthy acidity, is not quite as high-pitched as the 2000 version.
