Founded in 1948, Domaine Raveneau is arguably the finest producer of Chablis and is renowned for making incredibly complex wines from some of the greatest Premiers and Grand Crus vineyards in the region. Average production is often only around 3,000 cases and winemaking is both meticulous and traditional, with all grapes harvested by hand, fermentation in stainless steel and then maturation on lees in 7-8-year-old large oak feuillettes.

The 2016 Premier Cru Butteaux is a beautifully balanced wine that delivers wonderful scents of orchard fruits, citrus blossom and almond paste. Medium-bodied, textural and broad on the palate, it is perfectly tempered by incisive acids, cooling minerality and a distinctly saline tang to the long, lingering finish. Though now entering its drinking window, this will be best with another 3-5 years of age.

The 2016 Chablis Butteaux 1er Cru is terrific. I must say I am pleasantly surprised after encountering a far less impressive bottle of Montée de Tonnerre recently. Aromatic and finely delineated, the Butteaux is all charm. Citrus, orchard fruit, mint and dried herbs are all woven together in a Chablis endowed with lovely balance and a feeling of understated depth that is quite appealing.
