Founded in 1948, Domaine Raveneau is arguably the finest producer of Chablis and is renowned for making incredibly complex wines from some of the greatest Premiers and Grand Crus vineyards in the region. Average production is often only around 3,000 cases and winemaking is both meticulous and traditional, with all grapes harvested by hand, fermentation in stainless steel and then maturation on lees in 7-8-year-old large oak feuillettes. Premier Cru Butteaux is a beautifully balanced wine that delivers wonderful scents of orchard fruits, citrus blossom and almond paste. Medium-bodied, textural and broad on the palate, it is perfectly tempered by incisive acids, cooling minerality and a distinctly saline tang to the long, lingering finish.
Vinous
Pale yellow. Subtly complex aromas of quinine, lemon, mint and crushed stone; even more minerally than the Monteé de Tonnerre. Offers the most inner-mouth tension by far to this point, showing a sharply chiseled quality to its grapefruit and mineral flavors. (This site does great in warm years, noted Raveneau, as the portion of the vineyard at the rather flat top of the lieu-dit faces slightly northeast.)
