Thomas Pico established Domaine Pattes Loup in 2005 having inherited 8 hectares of vines from his family. Somewhat of an outlier in Chablis, he farms organically and biodynamically, and harvests by hand. Fermentation is done in either neutral wood, concrete and/or stainless dependent on the vintage and cuvée, with some wines kept for an extended period of time on the lees.
The 2017 Beauregard Premier Cru was made from 30-year-old vines in Courgis and was aged for two years in 4-6-year-old barrels. Medium- to full-bodied, this is an incredibly vibrant and complex yet focussed wine with many layers still yet to be revealed.

The 2017 Chablis Beauregard 1er Cru is a deep, viscous wine built on textural richness and volume. Dried apricot, almond, chamomile, spice, mint and lightly honeyed notes build in a dense, layered Chablis loaded with class and personality. The 2017 is silky, persistent, and exceptionally beautiful with a very saline, delicate finish. Antonio Galloni1st January 2020
