Perfection Preserved

Founded by Barney Wilczak, Capreolus is a Cotswolds-based distiller who put an obsession with quality at the very forefront of everything they do. Specialising in super-premium Eau de Vie, the team source only the finest local produce which are fermented using wild yeasts before being double distilled in a tiny copper pot. The results are intense, beguiling complex spirits that contain the very essence of the fruit from which they're crafted.

"It is much to my own bemusement that I find some of the world’s most respected sommeliers and bartenders championing us and placing us amongst the most iconic producers of wine and spirits". While Barney seems to have been blindsided by the praise and adulation his distillates are receiving, it's clear to anyone that tastes them there is something very special happening in Barney's tiny garden distillery.

In 2022, Hedonism Wines collaborated directly with Capreolus on a very special bottling of apricot Eaux de Vie, the first ever produced in England. Read our interview with Barney here.
