Caol Ila is the peated single malt produced at Caol Ila Distillery, located on the north eastern shores of Islay overlooking the Sound of Islay. Renowned for its poised, elegant style of peat, Caol Ila is celebrated for clean maritime smoke, citrus brightness, and a gentle oily texture. The spirit typically balances soft phenolic smoke with notes of lemon peel, brine, malted barley, and a subtle sweetness, creating a whisky that is smoky yet precise rather than heavy. Long regarded as one of Islay’s most versatile and consistent malts, Caol Ila offers a refined expression of coastal peat with excellent maturation potential.

This first fill bourbon barrel of Caol Ila was 15 January 2026 at a cask strength of 63.6% ABV into a 200 litre first-fill Wild Turkey barrel. With 120 original litres of pure alcohol, equivalent to approximately 188 litres of bulk spirit, the cask provides a robust foundation for long term ageing. The fresh bourbon wood is expected to complement Caol Ila’s elegant peat with layers of vanilla, toasted oak, coconut, and gentle baking spice, while amplifying the distillery’s signature citrus, brine, and clean smoke. The result should be a whisky that develops depth and sweetness without losing clarity or maritime definition.

Included in the price is three years of professional storage and insurance at Braeside Bond.

An Islay Powerhouse

One of the largest distilleries on Islay, Caol Ila was founded on the north of the island, near Port Askaig, in 1846. The distillery water source is Loch Nam Ban providing water filtered through a combination of limestone and peat. Caol Ila produces nearly four million litres a year, mostly for premium blended whiskies like Johnnie Walker. Only around a twentieth of the production is bottled as a single malt.

While the house-style is a classic, peated Islay malt, Caol Ila have successfully experimented with unpeated whiskies over the years. The core range features a 12 year old and an 18 year old along with Moch, a lighter style of single malt that takes its name from the Garlic for 'dawn'.
