Caol Ila 21 Year Old Wilson & Morgan 1981 is a premium Islay single malt distilled in 1981 and matured for 21 years. This expression, bottled by the specialist Wilson & Morgan, reflects over two decades of maturation, resulting in a profile of significant aromatic lift and textural richness. The bouquet is a sophisticated blend of medicinal smoke, manuka honey, toasted almonds and a faint floral perfume. On the palate, the whisky is full-bodied and silky, with flavours of peach cobbler, vanilla cream and soft wood spice. The long maturation has produced a spirit of great balance and structural focus, finishing with extraordinary length and a persistent note of sweet citrus and old wood. This is a benchmark for aged peated Islay malts, showcasing the elegance and concentration associated with the distillery’s stocks from the early 1980s.

An Islay Powerhouse

One of the largest distilleries on Islay, Caol Ila was founded on the north of the island, near Port Askaig, in 1846. The distillery water source is Loch Nam Ban providing water filtered through a combination of limestone and peat. Caol Ila produces nearly four million litres a year, mostly for premium blended whiskies like Johnnie Walker. Only around a twentieth of the production is bottled as a single malt.

While the house-style is a classic, peated Islay malt, Caol Ila have successfully experimented with unpeated whiskies over the years. The core range features a 12 year old and an 18 year old along with Moch, a lighter style of single malt that takes its name from the Garlic for 'dawn'.
