Château Canon 2016 is a Premier Grand Cru Classé `B` in Saint-Émilion comprising 74% Merlot and 26% Cabernet Franc. The wine exhibits complex aromas of violets, black cherries and wet earth, with a distinctly energetic, polished and fresh character on the palate. The château`s vineyard, totalling 34 hectares, is located on the Saint-Émilion limestone plateau, with 24 hectares designated for the Grand Vin. The 2016 vintage, known for its fine-grained tannins and layered, persistent finish, possesses the signature minerality and finesse that the estate achieves from its clay-limestone terroir. The wine was aged for 18 months, with 65% in new oak barrels.

The 2016 Canon is deep garnet-black in color. Wow - it rockets out of the glass with a powerful nose of blackberry preserves, chocolate-covered cherries, and blueberry compote followed by fragrant wafts of rose oil, dark chocolate, licorice, and tar. The 2016 Canon has a clean and fresh nose. The fruit profile is a mixture of red and black with just a hint of black truffle and licorice (the latter a trait that I had not picked up before). The palate is medium-bodied with finer tannins than the bottle four years ago, has a little more assertiveness and grip in situ, and is perhaps firmer and prepared for long-term maturation.
