Canon is a 1er grand cru classé, located in the appellation of Saint-Émilion. The estate has 18 hectares of vineyards, planted 70% to Merlot and 30% to Cabernet Franc, and the average age of the vines is 35 years. The 1995 vintage is a dark purple coloured wine, with a layered texture. In the glass, it reveals sweet, jammy red and black fruits, low acidity and a long, lush finish.

Good dark color, with ruby tones. Highly nuanced aromas of black and blue fruits, minerals, and shoe polish, plus complicating notes of meat and tomato. Sweet, dense, and rich, with a lovely floral perfume in the mouth; quite fat for this wine. This will age more on its tongue-dusting tannins than its soft acids.
