Introducing a new Blanc de Noirs from one of our favourite champagne producers, Bruno Paillard. The wine is made from 100% Pinot Noir grapes sourced from four Grand Crus. Verzenay, Mailly, Verzy, and Bouzy. Utilizing only the juice from the initial pressing, this champagne is designed to epitomize the rich and precise character of Pinot Noir from the northern crus. Expect vibrant aromas of rose petals, cherries, pink grapefruit, and a subtle hint of sweet spices. The palate offers a precise interplay of refreshing acidity and exceptionally fine bubbles. The long finish carries notes of salinity and delicate red cherry, leaving you eager for another sip.

One of the most harmonious cuvées in Bruno Paillard`s cellar this year, the 2019-based NV Blanc de Noirs Grand Cru was disgorged in June 2023 with a dosage of three grams per liter. The wine opens from the glass with a bouquet of cherry, grapefruit and pomelo, mingling with chamomile, nashi pear and a subtle touch of vanilla. The palate is medium- to full-bodied, simultaneously concentrated and elegantly muscular, combining texture with energy. A core of succulent fruit is supported by brisk acidity, and the wine concludes with a long, chalky finish. The blend draws from Verzenay, Verzy, Mailly-Champagne and Bouzy. - Kristaps Karklins

Excellent amount of information on the back label; Bruno Paillard was a pioneer of this. 100% Pinot Noir from the grands crus of Verzenay, Verzy, Mailly and Bouzy. Mostly 2018 with 12.5% of reserve wines. 24% of the wine was aged in used oak (if I am reading the very small print on the back label correctly). Disgorged November 2022 with a dosage of 3 g/l.Nose smoulders and the whole is explosively refreshing. It has the density of grand cru fruit and is very well balanced. A world away from a supermarket Blanc de Noirs from the Aube, it has real intensity. Very ripe fruit presumably accounts for the fact that, if served this blind, I would guess a higher dosage than 3 g/l. A robust classic wine that could well go with many an intricate dish. (JR)
