Bonnes-Mares 1998 from Domaine Dujac is a legendary Grand Cru red that highlights the Dujac estate’s signature whole-cluster fermentation technique. This winemaking approach adds an unmistakable aromatic lift of rose petals and exotic spices, alongside a structural backbone provided by the stem tannins. The 1998 vintage produced wines of great density and longevity, which Dujac managed through careful extraction and maturation in approximately 80% new French oak barrels. The palate is currently dominated by savoury notes of forest floor, sandalwood and macerated red fruits, with a hint of white pepper. It possesses a textural silkiness that belies its underlying power, a hallmark of the Morey-Saint-Denis side of this famous vineyard.

Medium red. Aromas of cherry, raspberry, licorice, herbs, humus, bitter chocolate and strong spicy oak. The most intensely flavored and powerful of these '98s but also a bit dominated by its spine. Very firm acids and serious, building tannins suggest that this backward wine will need a good eight to ten years of cellaring. A Focus on Terroir

Founded in the late 1960s by Jacques Seysses, who purchased and renovated Domaine Graillet in Morey-St-Denis. The estate is currently run by Jacques' sons Jeremy and Alec, who farm around 17 hectares of vines across the Côte including holdings in Echezeaux, Clos de la Roche, Charmes-Chambertin and Bonnes Mares.

A natural approach is taken in the vineyard and cellar with the estate moving from organic farming to fully biodynamic in the mid 2000s, receiving their certification in 2011. The team's focus is on elegance - temperatures are controlled to keep alcohol in check and also limit malolactic fermentation while juice from the crush is fed into the cellar by gravity only without the use of pumping. The wines of Domaine Dujac represent pure, balanced expressions of their respective terroirs.
