This is an incredibly rare RD jeroboam produced by Bollinger. 72% Pinot Noir, 28% Chardonnay, this beautiful Champagne saw a luxurious 21 years on the lees and offers up a complex, toasted nose, accompanied by refreshing acidity and beautiful balance.
88 Vinous
Walnut, hazelnut, butterscotch and a Tokaji-like suggestion of damp stone on the yeasty nose. Brisk in texture, quite dry and distinctly mature, with a nut skin note and slightly sour-edged acidity. But concentrated and firmly structured. A classic dinner table bubbly. Bollinger fans appreciate the mature flavors of this Champagne, but my sample seemed a bit past its best. The Bollinger vineyard covers 179 hectares, with 85% of these Grand and Premier Cru. One of the last family-run Champagne houses in the region, Bollinger is located in the village of Aÿ, near Épernay. A number of practices are key to the Bollinger approach: the majority of grapes used in the wines have to come from the Maison's own vineyards; Pinot Noir must play a dominant role in the blend; the role of micro-oxygenation from barrel fermentation; and long periods of bottle aging (two to three times longer than required).
