Bollinger RD 1979 is a mature vintage Champagne from the house of Bollinger. The `Récemment Dégorgé` series features prestige cuvées that have been aged on their lees for an extended period, in this case for many decades, before being released. The 1979 vintage is regarded as one of the finest of the 20th century, providing the wine with a monumental structure and a piercing acidity that has allowed it to age perfectly. It displays a complex profile of toasted brioche, dried mushrooms and roasted nuts, with a very low dosage to highlight its natural intensity.

The Bollinger vineyard covers 179 hectares, with 85% of these Grand and Premier Cru. One of the last family-run Champagne houses in the region, Bollinger is located in the village of Aÿ, near Épernay. A number of practices are key to the Bollinger approach: the majority of grapes used in the wines have to come from the Maison's own vineyards; Pinot Noir must play a dominant role in the blend; the role of micro-oxygenation from barrel fermentation; and long periods of bottle aging (two to three times longer than required).
