The Cuvée Côte aux Enfants is a red Coteaux Champenois AOC from Aÿ. Produced only in exceptional years and originating from the lieu-dit ‘la Côte aux Enfants’, this still wine is made from Pinot Noir grapes ripened in the best soil and exposure conditions. It reflects what the red wines of Champagne used to be in their heyday when they outshone those of Burgundy on the table of Henri IV. A wine that surprises with its concentration and power, featuring aromas of elderberry, currant, cherry, and liquorice.

A number of practices are key to the Bollinger approach: the majority of grapes used in the wines have to come from the Maison's own vineyards; Pinot Noir must play a dominant role in the blend; the role of micro-oxygenation from barrel fermentation; and long periods of bottle aging (two to three times longer than required).
