Black Chalk Paragon 2020 is a blanc de blancs sparkling wine crafted exclusively from 100% Chardonnay (clones 95, 121, 76 and 131). This wine hails from the Upper Levels vineyard in Hampshire. The base wine was aged with a high proportion of oak – 46% in a large new foudre – with the remainder in stainless steel, and saw no malolactic fermentation. The wine was aged for 26 months on the lees. It displays refined citrus, white stone fruit, a complex nutty and toasty oak profile, and a fine, saline-driven structure with pronounced acidity.

As a counterpart to the Inversion blanc de noirs from the same year comes the 2020 Paragon, from a single parcel of Chardonnay that achieved exceptional ripeness from the estate`s chalk soils in Hampshire. Chardonnay tends to be late to ripen here, and the blanc de blancs is not made every year; however, this example trains its undoubtedly bright, racy fruit style into an alluring complexity and integrity thanks to the ripeness of the year and vinification in a new 2,300-liter foudre. Initially reticent, time in the glass brings aromas of ripe conference pear and fresh lemon juice, with the mark of the foudre being felt in heady notes of jasmine, turmeric and maple. With no malolactic fermentation, it`s certainly invigorating, yet it avoids angularity or strident acidity. Further editions will turn down the wood influence as the foudre loses some of its initial imprint and, one imagines, achieve even greater harmony. - Tom Hewson
