The 2023 Bâtard-Montrachet Grand Cru from Thierry Pillot represents a notable example of Grand Cru white Burgundies, crafted from grapes cultivated on the Puligny side of the appellation. Thierry Pillot, who operates Domaine Paul Pillot in Chassagne-Montrachet, is recognised for a meticulous approach, prioritising terroir expression. The winemaking process emphasises minimal intervention, utilising native yeasts and fermentation in barrel with restrained oak influence. This vintage exhibits the tension and mineral integrity characteristic of Pillot’s style.

Though successful as winemaker at the family property, Domaine Paul Pillot, Thierry Pillot established his tiny négociant operation several years ago and rapidly garnered widespread acclaim for his small but impressive portfolios of wines. His wines are supremely terroir-driven and characterful, produced from organically farmed (uncertified) vines and with minimal new oak usage.

Making wonderful wines under his own label from some of the finest parcels of Chassagne-Montrachet, Santenay and St. Aubin, Thierry Pillot is a thoughtful winemaker who favours tension and crystalline purity, often eschewing more interventionist techniques and new oak to give the wines greater transparency.
