The jewel in Pillot’s crown must surely be his Grand Cru Bâtard-Montrachet. Produced using fruit from the Puligny side, the 2017 vintage yielded just one barrel. It is juicy, rich and voluminous, though a wonderful backbone of acidity maintains perfect balance and focus. Though relatively approachable in youth, such intensity and complexity will almost certainly see this wine improve with additional cellaring.

Though successful as winemaker at the family property, Domaine Paul Pillot, Thierry Pillot established his tiny négociant operation several years ago and rapidly garnered widespread acclaim for his small but impressive portfolios of wines. His wines are supremely terroir-driven and characterful, produced from organically farmed (uncertified) vines and with minimal new oak usage.
Making wonderful wines under his own label from some of the finest parcels of Chassagne-Montrachet, Santenay and St. Aubin, Thierry Pillot is a thoughtful winemaker who favours tension and crystalline purity, often eschewing more interventionist techniques and new oak to give the wines greater transparency.
