To craft The Balvenie DoubleWood, David Stewart MBE employs a meticulous process. The whisky begins its journey spending a minimum of 12 years in conventional whisky casks – American oak ex-bourbon barrels and hogsheads. This initial stage imparts a mellowness to the maturing spirit and introduces layers of warming vanilla spiciness. Subsequently, the whisky is transferred to Spanish oak ex-Oloroso sherry casks for an additional nine months, enhancing its complexity and adding fruity, honeyed depths to this exceptional Single Malt. The final touch involves transferring the whisky to large oak vessels known as ‘tuns’ for 3-4 months, allowing the various elements to harmonize and create a beautifully balanced expression.

One of Speyside's most famous single malts, located in Dufftown and owned by William Grant and Sons. The distillery was founded in the late 1800s by William Grant, who worked at the Mortlach distillery nearby. Master Distiller David Stewart is credited with making Balvenie the powerhouse we know today.
David worked at Balvenie for many decades and introduced many innovations that are now widespread across the industry including 'cask finishes' where whiskies are aged for a period in ex-Bourbon wood before being finished for a relative short period in a more active barrel.
