Avignonesi are widely regarded as one of the finest producers of the Tuscany speciality wine, Vin Santo, and this lesser-known wine will handsomely reward those adventurous enough to give it a try.
The Vin Santo di Montepulciano Occhio di Pernice is made from Sangiovese grapes that are hand-harvested from the finest vineyard parcels. The grapes are then dried on straw mats in the “appassitoio” (drying room) prior to pressing, followed by fermentation with indigenous yeasts and a long, slow maturation in “caratelli” (50-litre oak casks) for 10 years. The result is a rich and decadent wine hallmarked by intense notes of dried plums, dates, gingerbread, tobacco, Christmas cake spices and smoked nuts. An incredibly complex wine that ages brilliantly.
