Château Pavie is one of the leading producers of Saint-Émilion covering approximately 37 hectares under vine. In 2012 the property was upgraded to the first rank of the Classification of Saint-Émilion as a Premier Grand Cru Classé [A], a position that it managed to hold in 2022. This is the 2016 vintage of its second wine, Arômes de Pavie. A beautifully floral expression, combining dark berries, plums, velvety tannins, and finishing on a savoury note.
91 Vinous
The 2016 Arômes de Pavie, the second wine from Pavie, is matured in 50% new oak for 16 or 17 months. It presents a ripe, opulent bouquet of very pure kirsch, blueberry and cassis aromas, becoming more floral with aeration. The palate is medium-bodied with some wood tannin on the entry and notes of dark chocolate and tobacco infusing the black fruit. The finish is rounded and quite heady. This will require four to five years in bottle. Neal Martin1st January 2019

A Decadent St-Emilion

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
