Arômes de Pavie 2015 is a second-label wine from the renowned Château Pavie, reflecting meticulous attention to detail in its production. Originating from young vines and select barrels, this vintage offers a blend crafted predominantly from two hectares of land previously designated for the Grand Vin. The wine undergoes the same rigorous selection process as its prestigious counterpart, ensuring a wine that embodies the château`s commitment to quality. This vintage of the second wine of Château Pavie is a blend of 66% Merlot, 21% Cabernet Franc and 13% Cabernet Sauvignon and was matured 50% in new and 50% in one-year-old French oak barrels. Deep garnet-purple colored, the 2015 Arômes de Pavie reveals a beguiling nose of smoked meats, fragrant earth and sautéed herbs over a core of warm red and black plums, cherry compote and blackberry pie plus a waft of dried lavender. Medium to full-bodied, the palate reveals very fine and ripe yet wonderfully firm tannins plus a seamless backbone of freshness supporting the generous fruit, finishing long with wonderful restraint and elegance. - Lisa Perrotti-Brown

The 2015 Arômes de Pavie, the second wine of Pavie, emerges principally from two hectares on the plateau that were previously used for the Grand Vin. Black cherry, chocolate, new leather and plum flesh out to give this sumptuous, racy Saint-Émilion its inviting personality. Racy and alluring, the Arômes is a gorgeous wine that may very well hold some surprises down the road. Tasted two times.

A Decadent St-Emilion

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
