Arbois Pupillin Savagnin Overnoy Houillon 2010 is a natural white wine from the Jura region of France, crafted by the esteemed Domaine Pierre Overnoy, now helmed by Emmanuel Houillon. This wine is produced from the Savagnin grape, characterised by its high acidity and unique oxidative character due to prolonged élevage in barrel. Domaine Overnoy is known for its commitment to biodynamic practices, making this wine particularly noteworthy for its authentic expression of terroir.

The small bottles of ouillé Savagnin that they also call vieux Savagnin are really magical, perhaps even more so in the case of the 2010 Arbois Pupillin Savagnin Ouillé, also closed with yellow wax. It is super complex, with notes of spiced apples, yellow flowers and a dense, penetrating, pungent and intense palate. I always find some of flor character in these wines that spend a long time in barrel in the cellar, and they explained that even if you keep the barrels topped up, the character of the yeasts always finds its way into the wine. Funnily enough, Manu commented that he found it less oxidative that day. It is vibrant, with a touch of volatility that lifted up the wine, with a salty twist in the finish.
