Danbury Ridge Solstice NV is a multi-vintage English sparkling wine crafted from a classic blend of Pinot Noir, Chardonnay and Pinot Meunier. A portion of the wine undergoes barrel fermentation and matures using a perpetual solera system, enhancing its complexity. The dosage is 4.8 g/l, placing it in the extra brut category. This release features a well-defined core of acidity, balancing the richness of the fruit. Danbury Ridge is recognised for its commitment to producing high-quality wines in the warm Crouch Valley of Essex, one of the driest regions in the UK.

A great deal of thought and patience went into Danbury Ridge’s first sparkling wine, largely due to Essex’s forward, ripe fruit profile compared to most fruit used for English sparkling. The end result is very much set apart in style from most of its peers. The NV Solstice (first edition) is based on the 2019 harvest, with 25% from a perpetual reserve kept in foudre. It sets the ripe apricot kernel, dried pear and lemon barley fruit against darker, spicier tones of plum and roasted nuts, playing on some oxidative savory and vinous, food-friendly flavor saturation while teasing out a subtle bittersweet length. With its gentle mousse and warm flavor tones, it’s a far cry from either the narrowness or reliance on creamy lees and malolactic softening that prevails in English sparkling styles. For now, this is a wine to drink rather than one to hold, although more experience with the style and future editions/disgorgements will provide more data points. - Tom Hewson

60% Pinot, 40% Chardonnay. Sparkling wine based on 2018, their first. (The next cuvée is slightly less Chardonnay.) ‘We’re not ashamed of ripeness’, they say. It will be more than 12.5% alcohol and will probably be labelled as 13%. Only 4.5 bar pressure. Disgorged in August 2021. From foudre, it had struck-match character. No malo and no SO2 added. Dosage 5 g/l. 3,000 bottles.
