This sake is named after and made for Keigetsu`s Mr. Matsumoto`s friend John. They are both wine lovers and during a toast with one of Mr. Matsumoto`s sake, John asked why there were no bubbles. With that comment, Mr. Matsumoto made a sparkling sake for his friend John. Mr. Matsumoto opted to add CO2 to create the bubbles, as he wished to have a crystal clear sake and avoid the natural sediment that results from bottle fermentation.

Keigetsu

Keigetsu

Founded in 1877, Tosa Brewing company, who produce Keigetsu, have been using the clean mountain spring water of northern Kochi Prefecture to make their excellent sake for nearly 150 years. Rice is harvested from local terraced rice paddies and the focus is on creating high quality, premium sake in a variety of traditional styles.

The team produce Junmai and Junmai Daiginjo, but also Yamahai Junmai, an unfiltered Nigori sake, a sparkling sake and a Yuzusake, made with Japanese citrus. As part of the celebrations for our 10th Anniversary, we collaborated with the team at Tosa to produce Keigetsu 10, bottled exclusively for Hedonism Wines.
