Barbadillo Manzanilla Pasada En Rama De La Pastora Half
Founded in 1821, Barbadillo is the largest producers of Manzanilla and is renowned for their ‘Pasada En Rama’ (extra aged and bottled unfined and unfiltered) sherries. La Pastora was an old style of sherry resurrected by Barbardillo in 2014 to replicate those originally produced in the 19th Century. It spends six years in the Solear solera until specific barrels are selected to undergo an additional three years of maturation. With an average age of nine years, it is vibrant and intense with brine-tinged scents of bruised apple, grilled hazelnuts and salt. Yeasty but simultaneously fruity on the palate, it is supremely well-balanced and culminates in a long, complex and saline finish.
