We caught up with Andrea Wilson, Head of Maturation at Michter's to discuss the finer points of making and maturing fine whiskey.

Sour Mash Whisky is made by a process whereby some previously fermented mash is used as the starter for the next batch, much in the same way sourdough bread is made. Resurrected after a 25 year absence from the the shelves, Michter`s Sour Mash is full of notes of brown sugar, smoky fruit and honeyed vanilla. Elegant and complex, this is somewhere between their Bourbon and their Rye in terms of flavour and balance.
