Canta la Perdiz Dominio del Aguila 2017

Dominio del Aguila is a relatively young winery, established in 2010 by Jorge Monzón, who has experience working at prestigious estates such as Domaine de la Romanée-Conti in Burgundy and Vega Sicilia in Ribera del Duero. Canta la Perdiz is sourced from a single vineyard, which is known for its calcareous clay soils and high altitude. It is a blend of predominantly Tempranillo, with small amounts of other grape varieties such as Garnacha, Bobal, and Albillo. The grapes are hand-harvested and carefully sorted before undergoing fermentation with native yeasts in a combination of concrete and wooden vats. The wine is then aged in a mix of new and used French oak barrels for an extended period, usually around 30 months, to develop complexity and integrate flavours.
