Jerez

Jerez is famed around the world for its fine fortified wines, which are often referred to by their Anglicised name 'Sherry'. Produced in a variety of styles from bone dry to ultra sweet, primarily using the two indigenous grape varieties Palomino and Pedro Ximénez, the wines of Jerez are rarely bottled as single vintages with the vast majority comprising multi-vintage blends held in a series of barrels known collectively as a Solera.

Those who like their Sherry light and fresh should explore Fino and Manzanilla bottlings, while those who like added nuttiness and a pronounced savoury edge should indulge in dry Amontillado, Oloroso and Palo Cortado. Anyone with a sweet-tooth would be crazy to miss out on the unctuous Pedro-Ximénez or 'PX' Sherries - some of the world's most luxurious wines and the perfect accompaniment to a strong blue cheese.
