The Domain’s red is famously long-lived and complex. Typically, the wine is fermented with whole bunches and matured for two years in used barrels and foudres before being bottled unfiltered. The high proportion of Cabernet in the blend dictates that the wine cannot be labelled with the name of the local appellation protegée, Les Baux de Provence, and must instead be labelled as Vin de Pay.
