Historically, the family used to sell all their grapes to other producers, but Remi now personally oversees the vinification of approximately one-third of the estate`s harvest under his own brand.  His vineyard consists of 70% Pinot Noir, 20% Chardonnay, and the remaining portion is Pinot Meunier. He is gradually transitioning towards a minimal intervention approach, embracing natural yeast fermentation and adopting a delicate grape-handling process. This approach enables him to minimize the use of sulphur dioxide. The grapes are harvested at their optimal ripeness, reducing the need for significant dosage.  Leroy`s rosé boasts a vinous quality, and it is best enjoyed alongside a meal.
