The winemaking involves a distinctive process where approximately 50% of the grapes are pressed immediately after harvest, while the other 50% undergo a brief drying period (appassimento) for about two months. After primary fermentation with indigenous yeasts, a portion of the wine undergoes a second fermentation (ripasso) on the lees of the Amarone, adding depth and complexity. The wine then undergoes an exceptionally long aging period of approximately seven years in large Slavonian oak barrels before bottling.
