Vineyards are managed biodynamically with some regenerative practices. Sous Poids is produced from 80-year-old Chardonnay vines growing on grey marl soil in the lieu-dit Patarate in Rotalier. The wine is vinified and aged in old foudres for 20 months. No sulphur dioxide is added at any stage.
