Marsala is a sweet fortified wine made in the western Sicilian town of the same name. It is produced mostly using the local white grape varieties, Grillo, Inzolia and Cataratto. Much like Madeira and Sherry, Marsala is one of the unsung heroes of the wine world and offers drinkers a kaleidoscope of aroma and flavour. Often it has wonderful notes of caramelised stone fruits, candied citrus, dried honey, vanilla and spices.
