Wölffer Estate Vineyard was established in 1988 and spans approximately 470 acres, including the 55 acre sustainably farmed vineyard in Sagaponack, NY, and 52 acres on the North Fork of Long Island. The combination of Bridgehampton loam soil and breezes from the Atlantic Ocean provides maritime conditions ideally suited to producing wines with perfect balance of ripeness and acidity.
The Diosa Late-Harvest Chardonnay is sourced mostly from the oldest 1988-planted vineyard block. Grapes are harvested at maximal ripeness and then frozen immediately. The frozen grapes are then pressed and fermented in 100% stainless steel. Once the perfect balance of sugar, alcohol and fruit was achieved, it was racked to stop fermentation and retain 269g/L residual sugar. Serve slightly chilled alongside foie gras, blue cheese or fruit tarts.
