Wakaze is a young, experimental sake brewery, based in both Tokyo and Paris. ‘The Botanic’ is one of its current releases, which uses more white Koji than any other of their craft sakes, blending with the rich citrus notes of Menton lemons. Verbena from the south of France balances all the ingredients, leading to a juicy, refreshing sake.
