The Penca Verde was made by Maestro Mezcalero Valentin Celis in Zimatlan, Oaxaca and was roasted in conical earthen pits, then crushed by hand using wooden mallets before double distillation in clay pots. It has delicate subtle aromas of clay, tobacco and spice with earthy and smoky notes and apples and citrus fruits on the palate.
