Paolo Vodopivec only produces wine from a singular indigenous grape variety, Vitovska, in the Carso area of Friuli. It is wild-yeast fermented in Georgian amphorae with the skins for 6 months before pressing and further maturation in amphorae and 3000-lite oak barrels. This is a vibrant wine with yellow stone fruit, dried herbs and honey. Bottled without fining or filtration and with minimal sulphur.
