Joaquin is a flagbearer for the incredible wines of Campania and particularly for the characterful local varieties that grow there, Fiano and Aglianico. Vino della Stella Fiano d’Avellino is produced with grapes grown on calcareous soil at 700m a.s.l. Grapes are hand-harvested, rigorously sorted, destemmed and macerated for 48 hours. Fermentation then takes place in stainless steel tanks before a period of maturation.
This is an incredibly complex and intriguing wine. It sits in the glass straw yellow in colour and offers up beguiling aromas of stone fruits, citrus, marjoram, bay leaf and bitter nuts. Best served cool rather than chilled, this is a very gourmand style of wine that would pair beautifully with fresh seafood.
