Tissot Vin Jaune La Vasee Arbois 2011

Founded in the 1960s and now run by Stéphane and Bénédicte Tissot, Domaine Tissot is one of the leading producers in the Arbois and Côtes de Jura appellations with 50 hectares of meticulously tended organic and biodynamic vines. Vin Jaune is a distinctive style of wine particular to the region and undergoes an extended maturation period under a layer of flor which gives a deliciously savoury, nutty complexity to the aroma and flavour profile. This is a superb example offering notes of preserved citrus, spices and griddled nuts, with a wonderfully creamy, almost oily, texture and delicious salty tang on the finish. The classic food pairing with Vin Jaune is aged Comté.
