Satrapezo Saperavi 2015

This is a traditionally made dry red wine produced from native Georgian variety, Saperavi. The grapes come from the famous Kakheti region and are hand-harvested, entirely destemmed and fermented in subterranean clay pots (known as ‘kvevri’) with indigenous yeasts. After a month-long maceration, the wine is then transferred to small new oak barriques for a further 24 months. Deep red in colour, the nose is awash with deep brambly fruits, liquorice and spice. It is full-bodied, round and lightly grippy with tannin, yet retains wonderful freshness. A brilliantly food-friendly wine, this would pair superbly with classic Georgian-style dishes such as barbecued pork with sour plum sauce.
