Raventos i Blanc Blanc de Blancs 2017

This is a wonderful Blanc de Blancs Cava from the pioneering producer, Raventos. It is a produced from three native white varieties, Macabeu, Xarel-lo and Parellada, harvested from 40-year-old vines grown in the biodynamically farmed Vinya del Llac vineyard. Classically made, primary fermentation is in stainless steel followed by blending and secondary fermentation in the bottle. Maturation in the bottle with the lees is for a minimum of 18 months and the final disgorged wine is bottled with no additional dosage. This is a seriously enjoyable wine and a true benchmark for quality in the region.
