Founded in 1983, Peter Michel Winery is a boutique producer of incredibly high-quality Californian wines made in the mould of the great wines of Bordeaux and Burgundy. Les Pavots is the flagship red and the 2001 is composed of 72% Cabernet Sauvignon, 16% Cabernet Franc, 10% Merlot and 2% Petit Verdot from a single vineyard in the Knights Valley district of Sonoma County. Perfectly in its drinking window, this is a deliciously opulent and full-bodied red with classical Graves-like notes of crème de cassis, liquorice, cedar, scorched earth and graphite.
