This distinctive and characterful white wine is produced from a blend of 60% Garnacha Blanca, 30% Macabeo and 10% Pedro Ximenez sourced from old vines in the organically cultivated Salanques vineyard. Grapes were harvested and sorted by hand prior to 48-hours maceration with their skins. Fermentation was spontaneous with natural years and was aged in a combination of stainless steel and old French oak barrels.
Deep straw in colour, this is an intense and subtly textural wine, offering notes of citrus, stone fruits, wild herbs and fennel. There is a nice saline savouriness to the finish which makes this an excellent wine to pair with food.
